Plasmin/Fibrinolysin

Definition:

Plasmin/Fibrinolysin is the principal indigenous proteinase present in milk. Plasmin is a serine protease that cleaves cross-linked fibrin to produce fibrin degradation products. Plasmin is part of a complex protease-protease inhibitor system in milk.
