Cyanidin 3-sophoroside chloride  (Synonyms: Cy 3-soph)

Cyanidin 3-sophoroside chloride is a potent non-competitive reversible polyphenol oxidase (PPO)/Tyrosinase inhibitor. Also, Cyanidin 3-sophoroside chloride can be used as an anti-browning agent to inhibit the degree of PPO browning, enhance the antioxidant damage capacity of fruits and prolong the storage period^[1].
