Sodium octadecyl sulfate can also be used to coat the surface of starch aggregates, promote crosslinking and increase aggregate size through hydrophobic and electrostatic interactions, and further form a coexistent B-V type crystalline structure with acid-hydrolyzed gelatinized starch, thereby effectively modifying the structure and surface properties of high-starch systems.
