H-Val-Ala-OH (Valyl-alanine) is a dipeptide formed from L-Valine and L-Alanine residues. H-Val-Ala-OH has a role as a metabolite and also has a bitter taste[1][2].

In Vitro

H-Val-Ala-OH can self-assemble into various ordered structures such as square plates and wires in different solvents, and its self-assembly is influenced by factors such as solvent type, concentration, and intermolecular hydrogen bonds, while the reverse sequence Ala-Val cannot form similar ordered structures under the same conditions[1].
