EDTA iron sodium (Ethylenediaminetetraacetic acid iron sodium) is an orally active food fortifier and iron chelate. EDTA iron sodium provides absorbable iron during consumption of fortified soy sauce, rice-based meals, or complementary foods made from high-phytate grains. EDTA iron sodium increases serum iron levels for up to 4 h, and total non-heme iron levels in the liver also rise with increasing doses. EDTA iron sodium is applicable to research on iron deficiency anemia and lymphoma.

Biological Activity
EDTA iron sodium can be added to fish sauce and soy sauce without altering the sensory properties of the fortified condiments[1].
EDTA iron sodium exhibits dose-dependent genotoxicity both with and without metabolic activation, and its minimum effective dose ratio relative to FeSO4 is 2.2 in L5178Y mouse lymphoma cells[3].

EDTA (iron sodium) (5.0-40.0 g/kg; p.o.; single dose) shows delayed peak serum and liver iron levels compared to other iron compounds, induces dose-dependent increases in liver nonheme iron and mortality, and has an acute oral LD50 equivalent to 1.3 g elemental Fe/kg, corresponding to a 10.0 g/kg compound dose, in young male Sprague-Dawley rats[3].

Resulted in 100% survival of 8 animals, with total liver nonheme iron of 493 μg, serum iron of 430 μg/dL, and liver nonheme iron concentration of 68.8 μg/g at 5.0 g/kg.
Resulted in 50% survival of 8 animals, with total liver nonheme iron of 563 μg, serum iron of 366 μg/dL, and liver nonheme iron concentration of 97.5 μg/g at 10.0 g/kg.
Resulted in 12.5% survival of 8 animals, with total liver nonheme iron of 623 μg, serum iron of 490 μg/dL, and liver nonheme iron concentration of 157 μg/g at 12.5 g/kg.
Resulted in 0% survival of 8 animals at 15.0 g/kg.
Resulted in 12.5% survival of 8 animals at 20.0 g/kg.
Resulted in 0% survival of 4 animals at 30.0 g/kg.
Resulted in 0% survival of 6 animals at 40.0 g/kg.
Increased total liver nonheme iron with increasing dose, with a response approximately 50% lower than that observed with ferrous sulfate at equivalent elemental iron doses.
