β-sanshool (1:15000 to 1:2500 mass ratio; 11-33 min 100 °C incubation) reduces the oxidative damage of duck meat myofibrillar protein, decreasing carbonyl content by 57.96% and increasing free sulfhydryl content by 32.16%^[1].
β-sanshool (1:15000 to 1:2500 mass ratio; 11-33 min 100 °C incubation) promotes the folding of duck meat myofibrillar protein tertiary structure, preserves the secondary structure stability, reduces the surface hydrophobicity, and increases the thermal stability of duck meat myofibrillar protein^[1].
β-Sanshool weakly activates rat TRPV1 stably expressed in HEK293VR11 cells with an EC₅₀ of 54 μM^[2].
