Glucoberteroin (potassium) undergoes significant degradation during fermentation, with its content in moderately fermented samples dropping to 3 to 105 nmol/g DW, while it is almost completely eliminated in over-fermented pickles^[3].
Glucoberteroin (potassium) exists in the leaves, stems and seeds of Degenia velebitica, and serves as the main glucosinolate component in the seeds of this plant^[4].
