2,3-Diaminopropionic acid hydrochloride inhibits the activity of PPO in mushrooms, artichokes, and basil, and prevents the enzymatic browning of fruits and vegetables[2].
2,3-Diaminopropionic acid hydrochloride scavenges the α-dicarbonyl compound, and prevents the formation of advanced glycation endproducts (AGEs)[3].
