Lipoxidase, Glycine max (soybean)

Lipoxidase, Glycine max (soybean) is an enzyme mainly present in leguminous plants that catalyzes the oxidation of substrates such as linoleic acid, linolenic acid and arachidonic acid. Lipoxidase, Glycine max (soybean) promotes the formation of peroxides from oxidizable fats, leading to the loss of carotene, vitamin A, ascorbic acid and chlorophyll and accelerating food rancidity. It also catalyzes the coupled oxidation of carotenoids with specific antioxidants, but lacks linoleic acid conjugation activity under anaerobic conditions.
