(2R,3R)-Diethyl 2,3-dihydroxysuccinate has no genetic toxicity, repeated-dose toxicity, reproductive toxicity, skin sensitization, or local respiratory toxicity. It has high environmental safety and is thus supportive of its use in flavors and food additives^[2].
