2-Methylene-furan-3-one reductase (EC 1.3.1.105) is an enone oxidoreductase involved in the biosynthesis of 4-hydroxy-2,5-dimethyl-3(2H)-furanone (HDMF or furaneol), a key flavor compound in strawberries. It utilizes NADH and NADPH as electron donors.
