4-(Dimethylamino) cinnamaldehyde is a staining agent that reacts with flavan-3-ols and Proanthocyanidins (HY-N0794) bearing meta-dihydroxyl or trihydroxyl phenol structures to form a green chromophore. In acidic media, 4-(Dimethylamino) cinnamaldehyde undergoes a condensation reaction with aromatic primary amines to produce colored and stable quinoid protonated Schiff base salts. 4-(Dimethylamino) cinnamaldehyde can be used to determine indole products of apotryptophanase and tryptophanase, as well as for the detection and analysis of Proanthocyanidins, with the absorbance detection wavelength of the calibration curve set at 640 nm.

4-(Dimethylamino) cinnamaldehyde forms stable colored protonated quinoidal Schiff bases with aniline, most substituted anilines and aniline drugs in acidic citrate buffer media, and its protonation pK value is 3.18, which enables the determination of these amines by spectrophotometry[1].
4-(Dimethylamino) cinnamaldehyde (DMAC) can determine the content of Proanthocyanidins (HY-N0794) in cranberry powders (A, B, C) and cranberry juices (A, B, C, D)[2].
4-(Dimethylamino) cinnamaldehyde reacts with purified (-)-Epicatechin (HY-N0001), Procyanidin A2 (HY-N2343), and isolated cranberry Proanthocyanidins to form two stable cationic products (pyranium-type and ring-opened type)[3].
4-(Dimethylamino) cinnamaldehyde reacts with Catechin (HY-N0898), Procyanidin A2, Procyanidin B2 (HY-N0796) and cranberry Proanthocyanidins to produce colorimetric products, which exhibit distinct maximum absorbance values, Tmax times and calibration curve slopes[3].
4-(Dimethylamino) cinnamaldehyde assay enables the quantification of non-extractable Proanthocyanidins (NEPA) in the seed coat of red wheat. Studies show that NEPA content increases during seed maturation[3].
