Alcohol dehydrogenase, yeast is an alcohol dehydrogenase derived from yeast. Alcohol dehydrogenase is a class of oxidoreductases that catalyze the reversible oxidation of alcohols to aldehydes or ketones, with the concomitant reduction of NAD+ or NADP+. Alcohol dehydrogenase represents a large family of enzymes, which can be subdivided into at least three distinct enzyme superfamilies: medium-chain dehydrogenase/reductase (MDR), short-chain dehydrogenase/reductase, and iron-activated alcohol dehydrogenase (ADH).

In Vitro
Saccharomyces cerevisiae expresses multiple ADH isoenzymes with distinct kinetic properties. These isoenzymes exhibit different substrate preferences and ethanol affinities, and play specialized roles in fermentative ethanol production (Adh1p) and oxidative ethanol utilization (Adh2p)[1].
Trifluoroethanol exerts an inhibitory effect on yeast alcohol dehydrogenase I, exhibiting uncompetitive inhibition with respect to NAD+ (Ki = 2.1 mM) and competitive inhibition with respect to ethanol (Ki = 2.85 mM), which is consistent with a mode of action dominated by an ordered mechanism[3].
