1,2-Dimyristoyl-sn-glycero-3-phosphoethanolamine (DMPE) is a zwitterionic saturated phosphatidylethanolamine bearing two myristoyl (C14:0) chains, and serves as a model membrane component, a neutral lipid component of lipid nanoparticles, and a cocoa butter crystallization nucleating agent. 1,2-Dimyristoyl-sn-glycero-3-phosphoethanolamine is used in nucleic acid delivery, construction of artificial cell membrane models, and research on urothelial carcinoma.

Description
In Vitro
1,2-Dimyristoyl-sn-glycero-3-phosphoethanolamine (DMPE) (0.1 wt %) produces 70% dark chocolate with a Form V cocoa butter microcrystalline domain size of 96.76 nm and a microstrain of 2.82 ε, similar to properly tempered chocolate[2].
1,2-Dimyristoyl-sn-glycero-3-phosphoethanolamine (0.79 mM; 12 h) reduces the paraffin-water interfacial tension to 20.19 mN/m, whereas the co-presence of POS increases the interfacial tension to 27.19 mN/m[2].
1,2-Dimyristoyl-sn-glycero-3-phosphoethanolamine (approximately 4 mg; 5 min) exhibits three melting transitions at 106.78 °C, 137.58 °C, and 207.21 °C, and remains completely solid at typical chocolate processing temperatures[2].
1,2-Dimyristoyl-sn-glycero-3-phosphoethanolamine (1:10 POS ratio; 1 h-3 days) strongly promotes POS crystallization (induction time of 25.9 min) and drives the rapid formation of a stable high-melting-point (3L) polymorph corresponding to Form V, with the high-melting-point fraction accounting for 94% at 1 h and reaching 100% at 18 h[2].
1,2-Dimyristoyl-sn-glycero-3-phosphoethanolamine (0.1 wt %; 23-28 °C) significantly accelerates the crystallization of refined deodorized cocoa butter, with its Avrami rate constant at 28 °C being approximately 2 orders of magnitude higher than that of pure rbCB[2].
rbCB (0.1 wt %; 5 days) acts as a nucleating agent in refined cocoa butter, producing a high density of fine and uniform spherulites at 28 °C[2].
1,2-Dimyristoyl-sn-glycero-3-phosphoethanolamine (0.1-15 mg/mL; 5-30 min) forms giant vesicles via the water-in-oil reverse emulsion method[4].
