Biological Activity: Inulinase is expressed in various microorganisms, including yeasts, fungi, mesophilic bacteria. Inulinase can be used to produce inulooligosaccharides from inulin and inulin-containing materials. Inulinase produced by yeast has hydrolysing capability towards sucrose, inulin, levan type fructans exo-wise[1][2].
