Hexadecyl ferulate is a lipophilic C16 alkyl ferulate synthesized from ferulic acid and cetyl alcohol, possessing free radical-scavenging antioxidant activity. Hexadecyl ferulate (HF) (0.1-50 μg/mL; 15 min) exhibits scavenging activity in the DPPH• radical scavenging assay with an IC₅₀ of 0.083 nM, and displays potent scavenging activity in the ABTS radical cation decolorization assay with an IC₅₀ of 0.027 nM^[1].
Hexadecyl ferulate (HF) (200 mg/kg) inhibits the formation of lipid oxidation products in a soybean oil high-temperature frying model system, and its antioxidant effect is superior to that of short-chain alkyl ferulates^[2].
Hexadecyl ferulate (FA C16) belongs to the class of alkyl ferulates and exhibits weak antioxidant or weak pro-oxidant effects in fish oil-fortified emulsion systems^[3].
