Biological Activity: γ-Glu-Gly-Gly is a γ-glutamyl peptide whose first peptide bond is a special γ-amide bond, rather than the α-peptide bond commonly found in ordinary proteins. γ-Glu-Gly-Gly has strong resistance to common peptidases and is not easily degraded, which gives it better stability in organisms or during food processing. γ-Glu-Gly-Gly can be synthesized via catalysis by specific enzyme systems of Streptococcus agalactiae and Clostridium acetobutylicum.
