Biological Activity: Dextran sucrase is an extracellular glucosyltransferase. It uses sucrose as a glucosyl donor to transfer D-glucopyranosyl groups to growing dextran chains, while releasing fructose, thereby catalyzing the synthesis of dextran with α-(1→6) glycosidic bonds as the main component. In the presence of acceptor sugars such as maltose, dextran sucrase also catalyzes the synthesis of oligosaccharides. Dextran sucrase can be used in studies related to dextran, glucooligosaccharides and glycosyl transfer[1][2].
