Dextran sucrase
Dextran sucrase is an extracellular glucosyltransferase. It uses sucrose as a glucosyl donor to transfer D-glucopyranosyl groups to growing dextran chains, while releasing fructose, thereby catalyzing the synthesis of dextran with α-(1→6) glycosidic bonds as the main component. In the presence of acceptor sugars such as maltose, dextran sucrase also catalyzes the synthesis of oligosaccharides. Dextran sucrase can be used in studies related to dextran, glucooligosaccharides and glycosyl transfer.

Activité biologique
Dextran sucrase catalyzes glucosyl transfer using sucrose to synthesize dextran, and the Km value of purified free Dextran sucrase for sucrose is 0.018 M[2].
After adding 0.05% CaCl2 to the purified enzyme preparation, the activity of Dextran sucrase increases from 12.6 DSU/mL to 33.9 DSU/mL, and the activity recovery rate rises from approximately 33% to 86%[2].
When dextran sucrase is immobilized on glutaraldehyde-activated porous silica, the activity of the immobilized enzyme reaches 830 DSU/g support when a carrier with a specific surface area of 6 m2/g is used and maltose is added during the immobilization process[2] .
Dextran sucrase (sucrose: 10%; 30°C) can synthesize dextran with a molecular weight greater than 106. Under the same reaction conditions, the molecular weight of dextran produced by immobilized Dextran sucrase is higher than that produced by purified free enzyme[2].
