Sodium tripolyphosphate (STPP), 98% (0.1-0.3% (w/v); 48 h air-drying) incorporated into sodium alginate-chitosan composite edible films modulates their physicochemical, mechanical, antioxidant, morphological, crystalline, and thermal properties, including increasing thickness, elongation at break, water vapor permeability, moisture content, and DPPH scavenging activity, while reducing tensile strength, swelling index, and transparency[1].
