Aldose 1-epimerase (mutarotases) is a mutarotase and also a key enzyme in carbohydrate metabolism. Aldose 1-epimerase catalyzes the interconversion between α- and β-anomeric isomers of hexoses including glucose and galactose, with a preference for galactose. Aldose 1-epimerase can be used in studies related to galactosemia.
