Erythorbic acid is an orally active compound. Erythorbic acid improves the radiation resistance of Listeria monocytogenes. Erythorbic acid can react with free radicals and reduce oxidative damage. Erythorbic acid has weak antiscorbic activity. Erythorbic acid can prevent oxidative discoloration in meat products.
