(-)-3-Dehydroshikimic acid (3-DHS) is an intermediate of the Shikimate pathway. (-)-3-Dehydroshikimic acid is found in vegetables and fruits. (-)-3-Dehydroshikimic acid accumulates in bacterial mutants, serves as a precursor of aromatic metabolites, and competitively interferes with the growth response of mutant bacteria to Shikimic acid (HY-N0130). (-)-3-Dehydroshikimic acid exhibits weak antioxidant activity in liposomes and corn oil oil-in-water emulsions.

Description
In Vitro
(-)-3-Dehydroshikimic acid (10 μM; 21 min) exhibits the lowest antioxidant activity of the compounds tested in Fe2+-induced peroxidation of SLPC liposomes, with approximately 10% inhibition[3].
(-)-3-Dehydroshikimic acid (10 μM; 21 min) exhibits the lowest antioxidant activity of the compounds tested in AAPH-induced peroxidation of SLPC liposomes, with approximately 10% inhibition[3].
(-)-3-Dehydroshikimic acid (0.02% w/v) exhibits limited antioxidant activity or slight prooxidant activity in 10% corn oil-in-water emulsions in the absence of added Fe2+[3].
(-)-3-Dehydroshikimic acid (0.02% w/v) exhibits no antioxidant activity in 10% corn oil-in-water emulsions in the presence of 20 μM Fe2+[3].
(-)-3-Dehydroshikimic acid (0.02% w/v) remains largely intact in 10% corn oil-in-water emulsions, with only a small amount of gallic acid formation and no detectable protocatechuic acid[3].
