Hydrosorbaldehyde
Hydrosorbaldehyde is a green leaf volatile and also the main contributor to the fresh, grassy aroma of tea leaves. Hydrosorbaldehyde undergoes irreversible conversion to (E)-2-hexenal via (Z)-3:(E)-2-hexenal isomerase (CsHI). Hydrosorbaldehyde plays a key role in protecting plants against biotic stresses (such as pathogens and insects) and acting as a signaling chemical.

Biological Activity
Hydrosorbaldehyde (2 min) is irreversibly converted to (E)-2-hexenal by purified recombinant CsHI in vitro[1].
Hydrosorbaldehyde (50-1000 μM) functions as a substrate for purified recombinant CsHI, with a Km of 0.1 mM, Kcat of 0.96 s-1[1].
Hydrosorbaldehyde (0-8 h) content increases in torn Camellia sinensis var. Jinxuan leaves after 8 h of dehydration stress, while remaining unchanged under low temperature or mechanical wounding stress during 8 h of withering[1].
