Biological Activity
Linustatin (10 mM; 20 min) is used as a substrate by purified flax seed linustatinase with a Km of 2.6 mM, exhibits substrate inhibition at 10 mM linustatin, and hydrolyzes linustatin to linamarin and glucose[1].
