Biological Activity
Pullulanase acts synergistically with glucoamylase and other enzymes in starch saccharification. It increases the yield of glucose/maltose, reduces by-products, shortens reaction time, and lowers enzyme consumption, serving as a core enzyme preparation for deep starch processing[1].
