Description

Amaranth is an organic azo dye. Amaranth inhibits cellular immune response. Amaranth can be used as a food additive[1][2][3].

In Vivo

Amaranth (200-1000 mg/kg, p.o., twice, 24 h apart) shows no genotoxic effects in mice[1].
Amaranth (7.5 mg/kg, p.o., 4 weeks) used at doses up to 10 times the acceptable daily intake exertes a depressing effect on the cellular but not humoral immune response in albino rats[3].
