18:0-18:2 PE (1-Stearoyl-2-linoleoyl-sn-glycero-3-phosphoethanolamine) is a glycerophospholipid compound and an essential component of biological cell membranes. 18:0-18:2 PE possesses biological activities including regulation of phospholipid metabolism, antioxidant activity, maintenance of cell membrane fluidity, immune protection, and regulation of signaling pathways. 18:0-18:2 PE in the hot processing process, its unsaturated fatty acids will degrade to form a variety of odor active compounds. 18:0-18:2 PE can be applied in food processing and research on phospholipid metabolism-related diseases.

Biologische Aktivität
The interaction degree of 18:0-18:2 PE with cholesterol in the monolayer is the same as that of SM, which supports its potential role in the formation of lipid rafts in the inner layer of cell membranes[1].
18:0-18:2 PE (0.05 mM; 30 min) does not alter the oxidation product pattern of Linoleic acid (HY-N0729) in equimolar mixed liposomes of 18:0-18:2 PE and 18:0-18:2 PC (HY-126359). Under iron-initiated peroxidation, this pattern generates multiple oxidative species, among which hydroperoxides account for less than 30% of the total oxidation products[2].
Iron-driven hydroperoxide decomposition occurs in equimolar mixed liposomes of 18:0-18:2 PE and 18:0-18:2 PC pre-enriched with hydroperoxides upon treatment with 18:0-18:2 PE (0.05 mM; up to 30 min)[2].
When heated at 125 °C, 18:0-18:2 PE (1-10 mg/mL; 90-180 min) rapidly undergoes thermal oxidative degradation to form hydroperoxides, which then further decompose into non-volatile organic compounds (such as phospholipids substituted with epoxy, hydroxyl, or ketone groups) and volatile organic compounds (mainly 2-heptanone, hexanal, etc.), indicating that it is extremely susceptible to thermal oxidative damage[3].
