Perseitol is a seven-carbon sugar produced by mature avocado plants. Perseitol can be converted into D-mannoheptulose, serving as an energy-providing compound and a transport carbohydrate. Perseitol may act as a ripening inhibitor during fruit maturation. Perseitol can serve as a urinary biomarker for avocado intake and transaldolase deficiency. Perseitol can be used in studies related to transaldolase deficiency.

The concentration of perseitol in dried seed cotyledons of 'Hass' avocados (~11.5 mg g-1 DW) is higher than that of D-mannoheptulose, while its concentration is lower than that of D-mannoheptulose in cotyledons of light-grown and etiolated seedlings[1].
Perseitol accounts for approximately 25-26% of total sugars in exudates from fresh 'Hass' avocado shoots; in exudates collected from dried shoots 7 days after girdling, Perseitol is the only detectable sugar, with a concentration of approximately 7.35-7.71 mg mL-1[1].
The activity of converting perseitol to D-mannoheptulose in crude protein extracts from the mesocarp tissue of 'Hass' avocados is higher than that of converting D-mannoheptulose to perseitol[1].
