Sodium diacetate (Sodium hydrogen diacetate) is a multifunctional biochemical reagent with antibacterial (bacteria) and antifungal (fungi) activities. Sodium diacetate exerts its antimicrobial effect mainly by effectively penetrating the cell walls of microorganisms and interfering with enzyme interactions. Sodium diacetate inhibits the growth and survival of fungi such as Botrytis cinerea, as well as bacteria such as Listeria and Escherichia coli. Sodium diacetate inhibits the growth of endothelial cells. Sodium diacetate can be used in the synthesis of food preservatives, flavoring agents and pH control additives.

Biological Activity
Sodium diacetate (5-40 mM, > 100 mM; up to 72 h at 35°C) exhibits stronger growth inhibitory activity against Listeria monocytogenes strain Scott A in BHI broth within the pH range of 5.0-6.0 than Acetic acid (HY-Y0319) used alone; its MIC values are 5 mM at pH 4.7, 20 mM at pH 5.0, 30 mM at pH 5.5, and 40 mM at pH 6.0[1].
Sodium diacetate inhibits the growth of multiple pathogenic and spoilage bacteria including Escherichia coli, Pseudomonas fluorescens, Salmonella enteritidis, Shewanella putrefaciens, Bacillus cereus, and Listeria monocytogenes, but shows no inhibitory activity against Pseudomonas fragi, Yersinia enterocolitica, Enterococcus faecalis, Lactobacillus fermentum, and Staphylococcus aureus[1][3].
Sodium diacetate (SDA) (25-200 μM; 24-48 h) inhibits the growth of HUVECs in a dose- and time-dependent manner, with an IC50 of 485.82 µM at 24 h and 190.19 µM at 48 h[2].
Sodium diacetate (190.19 μM; 48 h) exhibits no apoptotic or necrotic effects in HUVECs, showing no nuclear damage, DNA fragmentation, ladder formation, and only negligible levels of apoptotic and necrotic cells[2].
Sodium diacetate (SDA) (1-5 g/L; up to 5 days) completely inhibits the in vitro mycelial growth of Botrytis cinerea at concentrations of 3 g/L and 5 g/L[4].
Sodium diacetate (1-5 g/L; 24 h) completely inhibits spore germination and germ tube growth of Botrytis cinerea after incubation at concentrations of 3 g/L and 5 g/L[4].
