Sorbitan monopalmitate is a food-grade, non-ionic emulsifier that exhibits oral activity. Sorbitan monopalmitate functions as a crystallization modifier, promoting the aggregation of spherical mango butter crystals, introducing lattice defects, and regulating the crystallization rate of mango butter. Sorbitan monopalmitate serves as a component of precursor vesicle gels, enabling the controlled and sustained release of drugs and facilitating the preparation of stable transdermal delivery formulations.

Biologische Aktivität
Sorbitan monopalmitate (0-5% w/w; 30 min) modulates the color properties of mango butter formulations. Compared with the group supplemented with 1% w/w Sorbitan monopalmitate, supplementation with 5% w/w Sorbitan monopalmitate reduces yellowness and increases whiteness[2].
Sorbitan monopalmitate (1-5% w/w; 30 min) promotes the aggregation of spherical mango fat crystals and forms a denser fat crystal network, thereby modulating the crystal structure of mango fat[2].
Sorbitan monopalmitate (1-5% w/w; 5 h) improves the mechanical stability of mango butter formulations[2].
