Pectinase, rhizobia (Macerozyme R-10) is a complex enzyme derived from Rhizopus species, which has a high proportion of pectinase along with small amounts of hemicellulase and cellulase. Pectinase, rhizobia can hydrolyze plant cell wall polysaccharides such as pectin and cellulose, and promote the maceration of plant tissues. Pectinase, rhizobia can be used in studies related to plant cell wall degradation, tissue maceration and enzyme-assisted extraction.

Biological Activity
Pectinase, rhizobia (Macerozyme R-10) (0.01-1.5% (w/w); 5-360 min) promotes liquefaction and juice extraction of bael fruits. Under the conditions of 0.96% (w/w) concentration, 45.6 °C temperature and 245.9 min incubation time, the predicted Δyield is 39.6%. It degrades both pectin and cellulose, with a maximum reaction rate Vm of 1.01 U in its modified Michaelis-Menten model. Compared with single pectinase, it achieves higher juice yield, TRS and clarity, but lower contents of vitamin-C, TPC, AOC and protein[1].
