Glucoberteroin is an aliphatic glucosinolate. Glucoberteroin can be isolated from Degenia velebitica, inhibits protein glycosylation and carbonylation, reduces the production of carbonylated proteins, and helps prevent skin aging.

Glucoberteroin (potassium) undergoes significant degradation during fermentation, with its content in moderately fermented samples dropping to 3 to 105 nmol/g DW, while it is almost completely eliminated in over-fermented pickles[3].
Glucoberteroin (potassium) exists in the leaves, stems and seeds of Degenia velebitica, and serves as the main glucosinolate component in the seeds of this plant[4].
