Δ7-Avenasterol binds to the prostaglandin E2 receptor (PDB ID: 6M9T) via hydrogen bonding and hydrophobic interactions, with a docking score of -9.181 kcal/mol, indicating its potential to modulate this receptor[1].
Δ7-Avenasterol potently binds to human COX-2 enzyme with a binding affinity of -10.7 kcal/mol[2].
Δ7-Avenasterol (24-120 h) remains stable during a 5-day in vitro dynamic colonic fermentation with human fecal microbiota in two matrices: whole-grain rye bread and phytosterol-enriched whole-grain rye bread; in the whole-grain rye bread treatment group, an increase in its level in specific colonic segments is observed over time[3].
