3-Hydroxy-2-pyrone is an inhibitor of matrix metalloproteinases (MMPs) and 5-lipoxygenase (5-LOX), with inhibition rates of 50% and > 70% at 1 mM, respectively. 3-Hydroxy-2-pyrone also exhibits certain inhibitory activity against the copper-dependent enzyme tyrosinase. 3-Hydroxy-2-pyrone can also serve as a synthetic precursor for the Diels-Alder synthesis of LLL12 (HY-19536). 3-Hydroxy-2-pyrone can be used as a food additive. 3-Hydroxy-2-pyrone can be used in research related to cancer, infection, and inflammation.
